The Future Super-food

Earlier, it was considered that poultry and mammals meat are the major sources of protein but now the scientist have begun to explore alternative sources of protein like edible insects.Why insect should be the future superfood?

It is estimated that by 2050 world population would be more than 9 billion and the conventional sources of protein may fall short of the demand so the alternative source for the same is the need of the hour and the option of edible insects is a worthwhile idea.

Edible Insects (ant, caterpillar, beetle, bees, cricket, grass hopper, mealworm, locust, silkworm etc) might be known as future super-food because they are safe for human consumption and have high nutritional properties (protein, vitamin, mineral, fibers and amino acid).  They are cheaper than the poultry meat because they do not need much nutritional input for themselves and could help tackle climate change by reducing emission linked to livestock production. In the present scenario of widespread scarcity of food and tremendously growing population, people should acclimatize to consume edible insects for their proper nutrition. They are perceived as a cheapest, portable, convenient source of protein.

According to FAO (Food and Agriculture Organization) it is estimated that 1900 edible insects are present worldwide out of which 255 are in India. The largest consumption of insect is in Africa, Asia and Latin America.

We know India is a tropical country and have high diversity and variety of insects are there. It has the potential land for insects’ bio resources.

In India, insects have traditionally been part of diet among indigenous communities and tribal regions since time immemorial. Bodos are the tribe of Assam in India who practice entomophagy after letting them die in sun. The tribes of Arunachal Pradesh eat 158 species of insects followed by Manipur, Assam, Nagaland (16 - 40 species of insects).  In Kerela, Tamilnadu, Madhya Pradesh, Karnatka where 6 species of insects are also being eaten. Rest populations who want to consume insect in their diet find it difficult due to their unavailability. Insects have higher feed conversion efficiency than mammalian  livestock.  It has been estimated that feed conversion of house cricket is twice of that of chicken, four times higher than in pigs and more than twelve times higher than in cattle.

The nutritional property is very surprising for the consumer as the protein content is above 60% and the fat content is between the ranges of 7 – 77 g per 100 g dry weight so its calorific value is between 293- 762 Kcal per 100 g dry weight. Insect protein is highly digestible (77% - 98%) and this quality can be increased by removing its exoskeleton (composed of chitin).

Taste and flavor of insects are very diverse. Ants & termites taste sweet and nutty, bugs taste like fried potatoes, cockroaches or cricket tastes like mushrooms, beetle tastes like bread. The person who likes to hasten to taste the insects wholly can try chocolate covered cricket. Chirpy Jerky (Pemmican style jerky made with roasted crickets & cricket powder) and Gourmet black ants have delightful citrusy/ acidic punch and a nice light crunch. Chapulines (toasted grasshopper)

The inclusion of insect in food such as snacks, protein shake, pickle , chutney, energy bars, boiled, roast and fried form, baked form and could be mixed with cream or sauce to form delicacies  is bound to boost the market. Carmine dye are prepared from the extract of insect protein and can be used as a food dye for juice, candy, yogurt and ice-cream.

There are burning global issues and problems regarding the food and the nutrition like famine, food insecurity, protein deficiency,  malnutrition etc. that can be addressed significantly by the intake of edible insects and more innovations in this direction.

Edible insect market has flourished due to its high demand, According to Meticulous research, edible insect market will increase with a CAGR of 23.8 % from 2018 to 2023 to reach USD 1,181.6 million by 2023. 

Although insects are nutritious and highly digestible most of the people repulse to eat them. There are certain factors behind this restraint but it is prominently the taboo or stigma in the mainstream society with regard to the insect consumption. However, non-regulatory standardized framework across the globe, lack of awareness, ethical issues, psychological barrier also hinder the growth of market to a great extent.

भारत में, कीड़े परंपरागत रूप से आदिवासी क्षेत्रों और आदिवासी क्षेत्रों में आहार का हिस्सा रहे हैं। बोडो भारत में असम की जनजाति है जो धूप में मरने के बाद कीटभक्षण करते हैं। अरुणाचल प्रदेश की जनजातियाँ मणिपुर, असम, नागालैंड (कीड़े की 16 - 40 प्रजातियाँ) के बाद कीड़े की 158 प्रजातियाँ खाती हैं। केरेला, तमिलनाडु, मध्य प्रदेश, कर्नाटका में जहाँ कीटों की 6 प्रजातियाँ खाई जा रही हैं। बाकी आबादी जो अपने आहार में कीट का उपभोग करना चाहते हैं, उनकी अनुपलब्धता के कारण यह मुश्किल लगता है। स्तनधारी पशुओं की तुलना में कीटों में भोज्य रूपांतरण क्षमता अधिक होती है। यह अनुमान लगाया गया है कि घरेलु झिंगुर का रूपांतरण मुर्गियों से दोगुना है, सूअर की तुलना में चार गुना और मवेशियों की तुलना में बारह गुना अधिक है।

उपभोक्ता के लिए पौष्टिक संपत्ति बहुत आश्चर्यजनक है क्योंकि प्रोटीन सामग्री 60% से ऊपर है और वसा की मात्रा 7 - 77 ग्राम प्रति 100 ग्राम सूखे वजन के बीच है, इसलिए इसका कैलोरी मान 293-762 किलो कैलोरी प्रति 100 ग्राम सूखे वजन के बीच है । कीट प्रोटीन अत्यधिक सुपाच्य होता है (77% - 98%) और इसकी गुणवत्ता को इसके बाहरी कंकाल (चिटिन से बना) को हटाकर बढ़ाया जा सकता है।

स्वाद और कीड़े के स्वाद बहुत विविध हैं। चींटियों और दीमकों का स्वाद मीठा और पौष्टिक होता है, कीड़े तले हुए आलू, कॉकरोच या क्रिकेट के स्वाद जैसे मशरूम, बीटल के स्वाद जैसे रोटी का स्वाद लेते हैं। जो व्यक्ति कीड़ों को चखने के लिए जल्दबाजी करना पसंद करता है, वह चॉकलेट से ढके झिंगुर की कोशिश कर सकता है। चिरपी जेरकी (भुना हुआ क्रिकेट और क्रिकेट पाउडर के साथ पेम्मिक शैली का झटकेदार) और पेटू काली चींटियों का दिलकश सिट्रस / अम्लीय पंच और एक अच्छा हल्का क्रंच है। चैपुलिन्स (टोस्टेड टिड्डी) का नाश्ता, प्रोटीन शेक, अचार, चटनी, एनर्जी बार, उबला, भुना हुआ और तले हुए रूप में भोजन में कीट को शामिल करने पके हुए रूप और क्रीम या सॉस के साथ मिलाया जा सकता है। कारमाइन डाई कीट प्रोटीन के अर्क से तैयार की जाती है और इसे रस, कैंडी, दही और आइसक्रीम के लिए खाद्य डाई के रूप में इस्तेमाल किया जा सकता है।

भोजन और पोषण के बारे में ज्वलंत वैश्विक मुद्दे और समस्याएं हैं जैसे अकाल, खाद्य असुरक्षा, प्रोटीन की कमी, कुपोषण आदि, जो खाद्य कीटों के सेवन और इस दिशा में अधिक नये प्रयोगों द्वारा महत्वपूर्ण रूप से निबटाये जा सकते हैं।

खाद्य कीट बाजार इसकी उच्च मांग के कारण फल-फूल रहा है, मेटिकुलस रिसर्च के अनुसार, खाद्य कीट बाजार 2018 से 2023 तक 23.8% की सीएजीआर के साथ बढ़कर 2023 तक USD 1,181.6 मिलियन तक पहुंच जाएगा।

हालांकि कीड़े पौष्टिक और अत्यधिक सुपाच्य होते हैं लेकिन ज्यादातर लोग इन्हें खाने से कतराते हैं। इस विरक्ति के पीछे कुछ कारक हैं लेकिन यह मुख्य रूप से सभ्रांत समाज में कीड़े के सेवन के संबंध में वर्जित या कलंक माना जाना है। हालांकि, दुनिया भर में गैर-नियामक मानकीकृत ढांचा, जागरूकता की कमी, नैतिक मुद्दे, मनोवैज्ञानिक बाधा भी बाजार के विकास में काफी हद तक बाधा डालते हैं।
